Cultivation of pepper for Paprika de La Vera

The process our growing paprika “  EL CABALLO DE OROS”

The paprika comes from the fruit of the plant named “pimenteras”, which are carefully transplanted the seedlings to our lands in the month of May. So begins during the summer months, and thanks to our microclimate, the birth of the fruit, the pepper. It will be the protagonist and will convert our fields in a deep green and red colour. At this stage of cultivation, the climate and the care of the crop will be responsible for the quality of the product.

Varieties of flavor of the paprika, based on pepper:

Sweet: mild-flavored, elaborated with the varieties of bola and Jaranda.

Bitterssweet : slightly spicy on the palate. Elaborated with the varieties Jariza and Jaranda.

Spicy: noticeable spiciness on the palate. Elaborated with the variety Jeromin

The dry peppers are transported to our industrial installations for grinding in the traditional stone mills. During the grinding process must be paid special attention to the temperature reached by the product to ensure the obtaining of a fine uniform red power of the highest quality: EL CABALLO DE OROS Paprika of La Vera.

Our Paprika is A dry product obtained from grinding ripe, healthy and clean peppers that have been smoke dried by the traditional La Vera System.

Organoleptic characteristics:

  1. Bright red colour.
  2. Aroma of firewood smoke that recalls its traditional drying process.
  3. Special taste with different degrees of spiciness according to whether it is SWEET, BITTERSWEET or SPICY.

Our drying process  by traditional system “ EL CABALLO DE OROS”

In September,  the peppers will be collection by hand, and they will be transported to the drying peppers local, where carefully selected  are drying according to the traditional “La Vera” process which is different from those used in other paprika production areas .

A fire of evergreen oak or oak firewood provides the heat which is necessary for the perfect dehydration of the peppers . This slow process takes from ten to fifteen days, during which expert hands turn over the peppers until they reach the ideal drying point.

This traditional drying system gives EL CABALLO DE OROS Paprika of La Vera its three essential characteristics: aroma, taste, and colour stability. It obtains its aroma and taste from the drying thanks to the smoke of the evergreen oak or oak firewood. Its colour stability is a consequence of the high degree of fixing of carotenes that occurs in the peppers throughout their cultivation in the microclimate of La Vera during the drying process.

As soon as you are going into the La Vera  area, it begins to perceive the smell of this zone and this time. A penetrating smell of roasted bell pepper makes this area is full of magic and tradition.

We distinguish ourselves because in all the route that the paprika makes in the milling process, we minimize the losses due to excess temperature by injecting cold air.

AROMA

Our paprika gives you the flavour of traditional Spanish cooking, with its wood-burning fire and slowly simmering stews, which released an appetite-whetting aroma. Now, in the hurried cooking of today, just a pinch of our paprika, which is classed as a delicacy, can bring back these forgotten aromas.

COLOUR

Our paprika, classified as Protected Designation of Origin “Pimentón de la Vera”, brings colour to your cooking, making your dishes look amazing. Studies have shown that our paprika has a more stable colour than those from other regions. This is important when several months may pass between the preparation and the serving of a dish, or if the dish has to be exposed to light, as is the case with sausages, pre-prepared meals, etc.

FLAVOUR

Our paprika, with its characteristic smoked flavour, adds that flair which transforms a stew into a mouth-watering dish. Our paprika is sold in three flavours: SWEET with a mild flavour, BITTERSWEET between sweet and slightly spicy and HOT with a nice spicy bite.
